Here is an easy recipe. Just serve with a salad and rolls and it makes a light and delicious summer meal.
Rigatoni With Olives and Bacon
Serves 4

6 slices bacon -
1/2 onion thinly sliced -
8 oz uncooked rigatoni or other small shaped pasta -
12 black olives pitted and chopped -
2 oz fresh Parmesan cheese
In a medium skillet, cook bacon until crisp. Remove with slotted spoon and drain on paper towels. Crumble bacon. Saute onions in bacon drippings until soft, about 5 minutes. Meanwhile, cook pasta according to directions. Drain pasta. Place pasta in a serving bowl. Toss pasta with bacon, onions and olives. Serve with shavings of fresh Parmesan cheese.
